Hope looms on the horizon, however, and Jennifer recalls the joys of visiting the Seychelles. Because the Seychelles have vaccinated all residents, it’s again open for tourism. Jennifer remembers her travels there before COVID, when she dove and snorkeled in pristine waters, discovered indigenous animals - such as a giant tortoise found only here - and relished the cuisine, crafted from local ingredients and incorporating the country's famous spices.
